Indulgent Chocolate Zucchini Smoothie

It's rare to use the words "zucchini, chocolate, and indulgent" in the same sentence.  I've done it before, with my chocolate blueberry zucchini bread, but even that is truly a dessert with some semblance of health and awareness.  

This smoothie, however, is a great example of how plant based foods can be sneakily delicious while fueling you up.

Boasting raw pumpkin seeds (iron), avocado (Omega-3 fatty acid and potassium), zucchini (anti-inflammatory, potassium, and did you know it's actually a fruit?!), figs (full of fiber and they're antibacterial), and spinach (along with some other nice ingredients to make it taste extra indulgent), enjoy this smoothie on its own merits through a straw, or dish it up as a smoothie bowl topped with seasonal fresh fruit (banana, kiwi, and blueberries would be delightful), granola, raw cacao, raw pumpkin seeds for additional crunch—whatever sounds mouth wateringly good to you!

Chocolate Zucchini Smoothie

 
 

Yields Three 16 oz Smoothies

Ingredients

30 oz filtered water
1 avocado
1 zucchini
1/2 cup raw pumpkin seeds
1/2 cup raw cacao
4 cups spinach
5 oz dried figs
2 tsp maca
1 tbsp coconut oil
1 scoop vanilla protein powder
1 tsp cinnamon
1/4 tsp himalayan sea salt

Blend it up and enjoy!
