I didn't learn how to cook until my hand was forced by food intolerances, allergies, and sensitivities.  At that point, I refused to eat bland, unpalatable foods or those laden with chemicals but labeled "gluten" "soy" or "dairy free."  That's when I got in the kitchen and got cooking (in an attempt to recreate some of my very favorite dishes), and, lo and behold, the kitchen has become one of my favorite places to spend my free time.  If you're interested in trying a more plant-based diet (that I guarantee is mouth-wateringly good)...
